We are still with the beef broth. And we are thinking about what to put in it. The most common supplement is soup noodles, thin, with or without eggs. Which cook quickly.
But today we will have fun with semolina dumplings. Don’t be afraid. It is something simplest and fastest you can do. It takes you five minutes to prepare and fifteen minutes to cook.
Put ten teaspoons of wheat semolina, one teaspoon of olive oil and one egg in a bowl. You can use melted butter instead of oil. Or nothing at all. The amount of ingredients is for two average eaters.
Stir everything well and set aside for an hour or so. Or put it in the fridge for fifteen minutes.
This is then scooped up with a teaspoon and placed in a pot of salted water. Put the spoon first in hot water so that the dumplings separate from it more nicely. Cook for fifteen minutes, take it out and put it on a plate. The dumplings should be fluffy but compact. Pour over boiling beef broth and that’s it.
Some people prefer to cook the dumplings directly in the soup. But be careful, the soup is not clear afterwards.
